- 1 block of firm tofu, drained and cubed
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup broccoli florets
- 1 carrot, sliced
- 1/2 onion, sliced
- 2 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tablespoons sesame oil
- 1 tablespoon cornstarch
- 1 teaspoon ginger, grated
- Salt and pepper to taste
Instructions
- In a small bowl, mix together soy sauce, sesame oil, cornstarch, ginger, salt, and pepper until well combined. Set aside.
- Heat a little oil in a large skillet or wok over medium-high heat.
- Add tofu cubes to the skillet and cook until browned on all sides, about 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, add more oil if needed and sauté garlic and onion until fragrant, about 2 minutes.
- Add the bell peppers, broccoli, and carrot to the skillet. Cook, stirring occasionally, until the vegetables are tender-crisp, about 5-7 minutes.
- Return the tofu to the skillet and pour the prepared sauce over the tofu and vegetables.
- Stir well to coat everything in the sauce and cook for another 3-5 minutes until heated through.
- Serve hot over rice or noodles.
Notes
- Feel free to customize the vegetables based on what you have available (e.g., snow peas, zucchini, mushrooms).
- For extra flavor, you can top the stir-fry with toasted sesame seeds or chopped green onions.
