  • 1 cup feta cheese
  • 1/4 cup olive oil
  • 2 cups assorted vegetables (bell peppers, cherry tomatoes, zucchini)
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  • Preheat the oven to 400°F (200°C).
  • Toss the vegetables (bell peppers, cherry tomatoes, zucchini) with olive oil, minced garlic, salt, and pepper. Spread them evenly on a baking sheet and roast in the oven for 20-25 minutes, or until tender.
  • Cook the pasta according to the package instructions. Before draining, reserve 1 cup of pasta water for later.
  • In a food processor, blend the feta cheese until smooth and creamy.
  • Slowly mix the whipped feta with the reserved pasta water until the desired consistency is reached.
  • Toss the cooked pasta with the roasted vegetables and creamy feta mixture. Top with fresh basil before serving.

Notes

  • You can use any assortment of vegetables you prefer, such as eggplant, mushrooms, or onions.
  • For a richer flavor, drizzle a little extra olive oil on top before serving.
