This Lebanese-style chicken shawarma is a flavorful and aromatic dish made with marinated chicken thighs, grilled to perfection and served with fresh vegetables and creamy garlic sauce, all wrapped in warm pita bread. It’s a perfect choice for a satisfying and delicious meal.


Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1/4 cup plain yogurt
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground paprika
  • 1/2 tsp ground turmeric
  • Salt and pepper to taste
  • Pita bread
  • Sliced tomatoes, onions, and cucumbers
  • Garlic sauce (toum) for serving

Instructions

  • In a bowl, mix together yogurt, olive oil, minced garlic, cumin, paprika, turmeric, salt, and pepper.
  • Add chicken thighs to the bowl and coat well with the marinade. Cover and refrigerate for at least 1 hour to allow the flavors to meld.
  • Preheat a grill or grill pan over medium-high heat. Grill the chicken for 6-7 minutes per side, or until fully cooked and the internal temperature reaches 165°F (75°C).
  • Once cooked, remove from heat and let the chicken rest for a few minutes. Slice the chicken into thin strips.
  • Warm the pita bread on the grill or in a pan for a few seconds on each side.
  • Assemble the shawarma wraps: Lay the warm pita bread flat, and add sliced chicken, tomatoes, onions, cucumbers, and a generous amount of garlic sauce (toum).
  • Roll up the pita tightly, and your delicious homemade chicken shawarma is ready to serve.

Notes

  • If you can’t find toum (garlic sauce), you can use a homemade or store-bought garlic mayo, though toum provides a much stronger garlic flavor.
  • Feel free to add pickled vegetables or lettuce to customize the shawarma to your liking.
  • For an authentic touch, serve the shawarma with a side of hummus or tabbouleh.
