  • 1/2 cup extra virgin olive oil

  • Salt and freshly ground black pepper to taste

Instructions

  • Combine Lemon Juice and Mustard:
    In a small bowl or jar, whisk together the fresh lemon juice and Dijon mustard until smooth.

  • Add Honey:
    Add the honey (or maple syrup) and continue to whisk until well combined.

  • Drizzle in Olive Oil:
    Slowly drizzle in the olive oil while whisking vigorously to emulsify the dressing. This will make it creamy and smooth.

  • Season:
    Add the minced garlic (if using), and season with salt and pepper to taste.

 

  • Serve or Store:
    Pour over salads, roasted vegetables, or grilled chicken. Store leftover vinaigrette in a sealed jar or bottle in the refrigerator for up to 1 week. Shake well before using.
