Description

A comforting Southern classic, this squash casserole features tender squash and onions in a creamy, cheesy base, topped with a crispy cracker crust. It’s the perfect side dish for family dinners or holiday gatherings.

Ingredients

Scale
  • 6 medium yellow squash, sliced
  • 1 medium onion, diced
  • 2 tablespoons unsalted butter
  • 1 cup sour cream
  • 1 can (10.5 oz) cream of chicken soup
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 ½ cups shredded cheddar cheese, divided
  • 2 cups crushed buttery crackers (like Ritz)
  • 3 tablespoons unsalted butter, melted

Instructions

  • Prepare the Squash:
    • In a large skillet, melt 2 tablespoons of butter over medium heat. Add the sliced squash and diced onion, cooking for about 5-7 minutes until the squash is tender. Remove from heat and set aside.
  • Make the Casserole Mixture:
    • In a large mixing bowl, combine sour cream, cream of chicken soup, garlic powder, salt, and black pepper. Stir until well-combined.
    • Add in 1 cup of shredded cheddar cheese and mix until the cheese is evenly distributed.
  • Combine Squash and Casserole Mixture:
    • Add the cooked squash and onion mixture to the bowl with the creamy sauce and cheese. Stir gently to combine everything evenly.
  • Prepare the Topping:
    • In a separate small bowl, mix the crushed crackers with melted butter until the crackers are well-coated.
  • Assemble the Casserole:
    • Transfer the squash mixture to a greased 9×13 baking dish and spread evenly. Top with the buttery cracker mixture and the remaining ½ cup of shredded cheddar cheese.
  • Bake:
    • Preheat your oven to 350°F (175°C). Bake the casserole for 25-30 minutes, or until the top is golden brown and bubbly.
  • Serve:
    • Let the casserole rest for a few minutes before serving. Enjoy this creamy, cheesy Southern delight!

Notes

  • You can substitute the cream of chicken soup with cream of mushroom soup for a vegetarian version.
  • For extra flavor, try adding some chopped herbs like thyme or parsley to the casserole mixture before baking.
