Instructions
- Prepare the Squash:
- In a large skillet, melt 2 tablespoons of butter over medium heat. Add the sliced squash and diced onion, cooking for about 5-7 minutes until the squash is tender. Remove from heat and set aside.
- Make the Casserole Mixture:
- In a large mixing bowl, combine sour cream, cream of chicken soup, garlic powder, salt, and black pepper. Stir until well-combined.
- Add in 1 cup of shredded cheddar cheese and mix until the cheese is evenly distributed.
- Combine Squash and Casserole Mixture:
- Add the cooked squash and onion mixture to the bowl with the creamy sauce and cheese. Stir gently to combine everything evenly.
- Prepare the Topping:
- In a separate small bowl, mix the crushed crackers with melted butter until the crackers are well-coated.
- Assemble the Casserole:
- Transfer the squash mixture to a greased 9×13 baking dish and spread evenly. Top with the buttery cracker mixture and the remaining ½ cup of shredded cheddar cheese.
- Bake:
