- 1 lb ground turkey (lean or extra lean)
- 2 large sweet potatoes, peeled and cubed
- 1 red bell pepper, diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 1 tablespoon olive oil
- ½ cup low-sodium chicken broth (or water)
- ½ cup shredded cheddar cheese (optional, for topping)
- Fresh cilantro or parsley, for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C). Grease or line a 9×13-inch baking dish with parchment paper.
- In a large skillet, heat the olive oil over medium heat. Add the ground turkey, breaking it up with a spoon as it cooks. Season with salt, pepper, smoked paprika, cumin, and oregano. Cook for 5-7 minutes, or until the turkey is browned and fully cooked through. Remove from the skillet and set aside.
- In the same skillet, add the diced sweet potatoes, bell pepper, onion, and garlic. Sauté for about 5 minutes, stirring occasionally. Add the chicken broth (or water), cover, and cook for 10-12 minutes, or until the sweet potatoes are tender but not mushy.
- Add the cooked turkey back into the skillet and stir to combine with the vegetables. Taste and adjust the seasoning as needed.
- Transfer the turkey and vegetable mixture to the prepared baking dish. Spread it evenly.
- If using, sprinkle the shredded cheddar cheese on top of the bake.
- Bake for 15-20 minutes, or until the cheese is melted and bubbly (if using), and everything is heated through.
- Garnish with fresh cilantro or parsley before serving.
