This Healthy Ground Turkey Sweet Potato Bake is a hearty, nutritious, and delicious one-pan meal.   • 1 lb ground turkey (lean or extra lean)
  • 2 large sweet potatoes, peeled and cubed
  • 1 red bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • ½ cup low-sodium chicken broth (or water)
  • ½ cup shredded cheddar cheese (optional, for topping)
  • Fresh cilantro or parsley, for garnish (optional)

Instructions

  • Preheat your oven to 400°F (200°C). Grease or line a 9×13-inch baking dish with parchment paper.
  • In a large skillet, heat the olive oil over medium heat. Add the ground turkey, breaking it up with a spoon as it cooks. Season with salt, pepper, smoked paprika, cumin, and oregano. Cook for 5-7 minutes, or until the turkey is browned and fully cooked through. Remove from the skillet and set aside.
  • In the same skillet, add the diced sweet potatoes, bell pepper, onion, and garlic. Sauté for about 5 minutes, stirring occasionally. Add the chicken broth (or water), cover, and cook for 10-12 minutes, or until the sweet potatoes are tender but not mushy.
  • Add the cooked turkey back into the skillet and stir to combine with the vegetables. Taste and adjust the seasoning as needed.
  • Transfer the turkey and vegetable mixture to the prepared baking dish. Spread it evenly.
  • If using, sprinkle the shredded cheddar cheese on top of the bake.
  • Bake for 15-20 minutes, or until the cheese is melted and bubbly (if using), and everything is heated through.
  • Garnish with fresh cilantro or parsley before serving.

  • For a dairy-free version, simply omit the cheese or use a dairy-free cheese substitute.
