Ingredients

For the Scallops:

1 tablespoon unsalted butter

1 pound sea scallops

Kosher salt and freshly ground black pepper, to taste

For the Lemon Butter Sauce:

2 tablespoons unsalted butter

3 cloves garlic, minced

3 tablespoons freshly squeezed lemon juice

Kosher salt and freshly ground black pepper, to taste

2 tablespoons chopped fresh parsley leaves

Instructions

Cook the Scallops:

Heat 1 tablespoon of unsalted butter in a large skillet over medium-high heat.

Season the scallops with kosher salt and freshly ground black pepper.

Once the butter has melted and is hot, add the scallops to the pan in a single layer. Cook for 2-3 minutes on each side until golden brown and cooked through. Remove from the pan and set aside.

Make the Lemon Butter Sauce:

In the same skillet, add 2 tablespoons of unsalted butter and minced garlic. Sauté for 1-2 minutes until fragrant.

Stir in the freshly squeezed lemon juice, kosher salt, and freshly ground black pepper to taste. Allow the sauce to simmer for a minute or two, letting the flavors combine.

Combine and Serve:

Return the cooked scallops to the skillet and toss them in the lemon butter sauce for 1-2 minutes to coat them evenly.

Remove from heat and sprinkle with fresh parsley.
