Description

These Lemon Butter Scallops are a perfect balance of succulent scallops and a rich, tangy butter sauce. Quick and easy to make, they make for a delicious appetizer or main course that’s bursting with fresh lemon flavor!


Ingredients

  • For the Scallops:

    • 1 tablespoon unsalted butter

    • 1 pound sea scallops

    • Kosher salt and freshly ground black pepper, to taste

  • For the Lemon Butter Sauce:

    • 2 tablespoons unsalted butter

    • 3 cloves garlic, minced

    • 3 tablespoons freshly squeezed lemon juice

    • Kosher salt and freshly ground black pepper, to taste

    • 2 tablespoons chopped fresh parsley leaves


Instructions

  • Cook the Scallops:

    • Heat 1 tablespoon of unsalted butter in a large skillet over medium-high heat.

    • Season the scallops with kosher salt and freshly ground black pepper.

    • Once the butter has melted and is hot, add the scallops to the pan in a single layer. Cook for 2-3 minutes on each side until golden brown and cooked through. Remove from the pan and set aside.

  • Make the Lemon Butter Sauce:

    • In the same skillet, add 2 tablespoons of unsalted butter and minced garlic. Sauté for 1-2 minutes until fragrant.

    • Stir in the freshly squeezed lemon juice, kosher salt, and freshly ground black pepper to taste. Allow the sauce to simmer for a minute or two, letting the flavors combine.

 

  • Combine and Serve:

    • Return the cooked scallops to the skillet and toss them in the lemon butter sauce for 1-2 minutes to coat them evenly.

    • Remove from heat and sprinkle with fresh parsley.

    • Serve immediately with your favorite side dish.

Notes

  • Scallop Preparation: Be sure to pat the scallops dry with a paper towel before cooking to get a nice sear.
