1 pound boneless, skinless chicken breasts, thinly sliced

1/2 onion, chopped

1 can (15 oz) pineapple chunks, drained

1/4 cup soy sauce

1/4 cup honey

1/4 cup rice vinegar

1 clove garlic, minced

Instructions

Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Add thinly sliced chicken breasts and cook until browned and cooked through, about 5–6 minutes. Remove and set aside.

Sauté the aromatics: In the same skillet, add chopped onion and cook for 2–3 minutes until softened. Add garlic and cook for another 30 seconds.

Make the sauce: Stir in soy sauce, honey, rice vinegar, and red pepper flakes (if using). Let the mixture come to a simmer.

Add pineapple: Stir in the drained pineapple chunks and let the sauce cook for 3–4 minutes until slightly thickened.

Combine and finish: Return the cooked chicken to the skillet and toss everything together to coat the chicken in the sauce. Simmer for another 2–3 minutes to let the flavors meld.

Notes
