  • 1 pound boneless, skinless chicken breasts, thinly sliced

  • 1 tablespoon olive oil

  • 1/2 onion, chopped

  • 1 can (15 oz) pineapple chunks, drained

  • 1/4 cup soy sauce

  • 1/4 cup honey

  • 1/4 cup rice vinegar

  • 1 clove garlic, minced

  • 1/4 teaspoon red pepper flakes (optional)

Optional for serving:

  • Steamed jasmine or white rice

  • Chopped green onions

  • Sesame seeds


Instructions

  1. Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Add thinly sliced chicken breasts and cook until browned and cooked through, about 5–6 minutes. Remove and set aside.

  2. Sauté the aromatics: In the same skillet, add chopped onion and cook for 2–3 minutes until softened. Add garlic and cook for another 30 seconds.

  3. Make the sauce: Stir in soy sauce, honey, rice vinegar, and red pepper flakes (if using). Let the mixture come to a simmer.

  4. Add pineapple: Stir in the drained pineapple chunks and let the sauce cook for 3–4 minutes until slightly thickened.

  5. Combine and finish: Return the cooked chicken to the skillet and toss everything together to coat the chicken in the sauce. Simmer for another 2–3 minutes to let the flavors meld.

  6. Serve: Spoon over cooked rice and garnish with chopped green onions or sesame seeds if desired.

Notes

For extra flavor, marinate the chicken in a bit of soy sauce and pineapple juice before cooking.

Make it spicy by adding a dash of Sriracha or extra red pepper flakes.
