Ingredients
Scale
- 1 cup full-fat cottage cheese (strained)
- 1/4 cup grated Parmesan cheese
- 1/4 cup almond flour (or ground flaxseed for a different texture)
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
- 1/2 tsp dried oregano (or your favorite seasoning blend)
- Salt and pepper, to taste
- Optional: 1/2 tsp paprika or chili powder (for a bit of heat)
Instructions
- Preheat the oven:
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat for easy removal.
- Mix the ingredients:
- In a medium bowl, combine the strained cottage cheese, Parmesan cheese, almond flour, garlic powder, onion powder, oregano, and any optional seasonings (paprika, chili powder, etc.).
- Mix until everything is well-combined, and the mixture has a dough-like consistency.
- Form the chips:
- Drop spoonfuls of the mixture onto the prepared baking sheet. Use a spoon or your fingers to spread each spoonful into a thin, round shape (about the size of a regular chip).
- Make sure the chips are spaced out evenly to allow airflow around them as they bake.
- Bake:
- Bake in the preheated oven for 12-15 minutes, or until the chips are golden and crispy around the edges. Keep an eye on them toward the end to prevent burning, as the cooking time may vary based on your oven and how thinly the mixture is spread.
- Cool and serve:
- Let the chips cool on the baking sheet for a few minutes before serving. They’ll crisp up even more as they cool down.
- Serve with your favorite low-carb dip, such as guacamole, salsa, or a creamy cheese dip.
Notes
- For extra flavor, you can experiment with different seasonings like Italian seasoning, rosemary, or even a bit of cayenne pepper for a spicy kick.
- Be sure to strain the cottage cheese well to remove excess liquid, so the mixture holds its shape when baking.
- These chips can be stored in an airtight container for 3-4 days, but they’re best eaten fresh for maximum crispiness.
