- 2 cups fresh peaches, peeled and diced
- 1 cup sugar
- 2 eggs
- 1 cup heavy cream
- 1 cup milk
- 1 teaspoon vanilla extract
Instructions
- In a medium saucepan, combine the peaches and sugar. Cook over medium heat until the sugar is dissolved and the peaches are soft, about 5 minutes. Remove from heat and let cool.
- In a separate bowl, beat the eggs until light and fluffy. Gradually whisk in the cream, milk, and vanilla extract.
- Stir in the cooled peach mixture.
- Pour the mixture into an ice cream maker and freeze according to the manufacturer’s instructions.
- Once the ice cream is frozen, transfer it to a container and freeze for an additional 2 hours before serving.
Notes
- For extra texture, you can reserve a few peach chunks to stir into the ice cream after it has finished churning.
- You can substitute fresh peaches with frozen peaches if needed, but fresh peaches will provide the best flavor.
