  • 1 egg

For the Cream Cheese Filling:

  • 4 oz cream cheese, softened
  • 1/4 cup sugar
  • 1 egg yolk
  • 1/2 tsp vanilla extract

Instructions

  • Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  • Prepare the muffin batter: In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • In a separate bowl, whisk together the milk, vegetable oil, egg, and vanilla extract.
  • Combine wet and dry ingredients: Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chocolate chips.
  • Prepare the cream cheese filling: In another bowl, beat the cream cheese, sugar, egg yolk, and vanilla extract until smooth.
  • Assemble the muffins: Fill each muffin cup halfway with the chocolate batter, then add a dollop of the cream cheese mixture on top.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean (checking for the chocolate part).
  • Cool the muffins in the tin for a few minutes, then transfer to a wire rack to cool completely.

Notes

  • For a richer cheesecake flavor, you can add a little lemon zest to the cream cheese mixture.
  • If you prefer a denser muffin, you can reduce the milk to 3/4 cup.
