For the Muffins:
- 1 1/2 cups all-purpose flour
- 3/4 cup sugar
- 1/4 cup cocoa powder

- 1 egg
- 1 tsp vanilla extract
- 1/2 cup chocolate chips

- 4 oz cream cheese, softened
- 1/4 cup sugar
- 1 egg yolk
- 1/2 tsp vanilla extract
Instructions
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
- Prepare the muffin batter: In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the milk, vegetable oil, egg, and vanilla extract.
- Combine wet and dry ingredients: Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chocolate chips.
- Prepare the cream cheese filling: In another bowl, beat the cream cheese, sugar, egg yolk, and vanilla extract until smooth.
- Assemble the muffins: Fill each muffin cup halfway with the chocolate batter, then add a dollop of the cream cheese mixture on top.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean (checking for the chocolate part).
- Cool the muffins in the tin for a few minutes, then transfer to a wire rack to cool completely.
Notes
- For a richer cheesecake flavor, you can add a little lemon zest to the cream cheese mixture.
- If you prefer a denser muffin, you can reduce the milk to 3/4 cup.
