Description

Soft and delicate ricotta almond pillows with a light almond flavor, golden-brown on the outside and tender on the inside. A delightful treat dusted with powdered sugar for a sweet finish!


Ingredients

  • 1/2 cup almond flour
  • 1/4 cup powdered sugar
  • 1 egg
  • 1/2 teaspoon almond extract
  • Pinch of salt
  • Powdered sugar for dusting

Instructions

  • In a mixing bowl, combine ricotta cheese, almond flour, powdered sugar, egg, almond extract, and salt.
  • Mix well until a smooth dough forms.
  • Roll the dough into small balls and flatten slightly to form pillows.
  • Heat a pan over medium heat and cook the pillows for 2-3 minutes on each side until golden brown.
  • Remove from heat and dust with powdered sugar before serving.

Notes

  • Make sure to cook the pillows in batches to prevent overcrowding the pan.
