- 1/2 cup almond flour
- 1/4 cup powdered sugar
- 1 egg
- 1/2 teaspoon almond extract
- Pinch of salt
- Powdered sugar for dusting
Instructions
- In a mixing bowl, combine ricotta cheese, almond flour, powdered sugar, egg, almond extract, and salt.
- Mix well until a smooth dough forms.
- Roll the dough into small balls and flatten slightly to form pillows.
- Heat a pan over medium heat and cook the pillows for 2-3 minutes on each side until golden brown.
- Remove from heat and dust with powdered sugar before serving.
Notes
- Make sure to cook the pillows in batches to prevent overcrowding the pan.
- For extra flavor, you can add a few drops of vanilla extract or a pinch of cinnamon.
