Description
A creamy, comforting Broccoli Cheddar Soup made with tender broccoli, carrots, and melted cheddar cheese. Perfect for a cozy meal on a cold day!

- 1/4 cup butter
- 1/2 onion, chopped
- 1 clove garlic, minced
- 1/4 cup all-purpose flour
- 2 cups half-and-half
- 3 cups chicken broth
- 2 large heads of broccoli, chopped
- 2 carrots, peeled and chopped
- 2 cups shredded cheddar cheese
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat. Add the onion and garlic, and cook until softened.
- Stir in the flour until well combined. Gradually whisk in the half-and-half and chicken broth.
- Add the broccoli and carrots, and simmer until vegetables are tender.
- Using an immersion blender, blend the soup until smooth. (Alternatively, you can blend in batches in a regular blender for a smoother texture.)
- Stir in the shredded cheddar cheese and cook until melted and smooth.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
Notes
- For extra creaminess, you can add more half-and-half or a splash of heavy cream.
- If you prefer a chunkier texture, skip the blending step and leave the soup as is.
- Top with extra shredded cheddar cheese before serving for a cheesy finish!
