Description

A creamy, comforting Broccoli Cheddar Soup made with tender broccoli, carrots, and melted cheddar cheese. Perfect for a cozy meal on a cold day!


Ingredients

  • 1/4 cup butter
  • 1/2 onion, chopped
  • 1 clove garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups half-and-half
  • 3 cups chicken broth
  • 2 large heads of broccoli, chopped
  • 2 carrots, peeled and chopped
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  • In a large pot, melt the butter over medium heat. Add the onion and garlic, and cook until softened.
  • Stir in the flour until well combined. Gradually whisk in the half-and-half and chicken broth.
  • Add the broccoli and carrots, and simmer until vegetables are tender.
  • Using an immersion blender, blend the soup until smooth. (Alternatively, you can blend in batches in a regular blender for a smoother texture.)
  • Stir in the shredded cheddar cheese and cook until melted and smooth.
  • Season with salt and pepper to taste.
  • Serve hot and enjoy!

Notes

  • For extra creaminess, you can add more half-and-half or a splash of heavy cream.
  • If you prefer a chunkier texture, skip the blending step and leave the soup as is.
  • Top with extra shredded cheddar cheese before serving for a cheesy finish!
