- 1 (14.5 oz) can diced tomatoes
- 8 lasagna noodles, broken into pieces
- 2 cups shredded mozzarella cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the beef: In a large pot, cook the ground beef over medium heat until browned. Add the diced onion, minced garlic, and Italian seasoning, and cook until the onion becomes translucent.
- Add liquids and noodles: Stir in the chicken broth, Alfredo sauce, diced tomatoes, and broken lasagna noodles. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20 minutes, or until the noodles are tender.
- Melt the cheese: Stir in 1 cup of shredded mozzarella cheese and cook until melted and smooth. Season with salt and pepper to taste.
- Serve: Ladle the soup into bowls and garnish with the remaining mozzarella cheese and freshly chopped parsley.
