  • Author: Catalina
  • Total Time: 40 minutes
  • Yield: 6 1x

Description

  • This rich and comforting soup combines the creamy goodness of Alfredo sauce with hearty ground beef, lasagna noodles, and melty mozzarella cheese. It’s a quick, one-pot meal that delivers all the flavors of lasagna in a soup form. Perfect for cozy dinners!

Ingredients

Scale

  • 1 lb ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 6 cups chicken broth
  • 1 (15 oz) jar Alfredo sauce
  • 1 (14.5 oz) can diced tomatoes
  • 8 lasagna noodles, broken into pieces
  • 2 cups shredded mozzarella cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook the beef: In a large pot, cook the ground beef over medium heat until browned. Add the diced onion, minced garlic, and Italian seasoning, and cook until the onion becomes translucent.
  • Add liquids and noodles: Stir in the chicken broth, Alfredo sauce, diced tomatoes, and broken lasagna noodles. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20 minutes, or until the noodles are tender.
  • Melt the cheese: Stir in 1 cup of shredded mozzarella cheese and cook until melted and smooth. Season with salt and pepper to taste.
  • Serve: Ladle the soup into bowls and garnish with the remaining mozzarella cheese and freshly chopped parsley.

Notes

  • You can substitute the ground beef with ground turkey or chicken for a lighter version.
  • If you prefer a thicker soup, reduce the chicken broth or add an extra 1/2 cup of Alfredo sauce.
  • This soup pairs wonderfully with garlic bread or a side salad for a complete meal.
