Ingredients

Scale
  • 6 cups chicken broth
  • 6 large potatoes, peeled and diced
  • 1 cup chopped dill pickles
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 2 cups milk
  • 1 cup sour cream
  • Salt and pepper to taste

Instructions

  • In a large pot, bring chicken broth to a boil.
  • Add diced potatoes and chopped dill pickles to the pot, then simmer until the potatoes are tender (about 15-20 minutes).
  • In a separate saucepan, melt butter over medium heat.
  • Stir in the flour to make a roux, cooking for 1-2 minutes until golden.
  • Gradually whisk in the milk until the mixture is smooth and thickened.
  • Add the roux mixture to the pot with the broth and potatoes, stirring to combine.
  • Stir in the sour cream, then season with salt and pepper to taste.
  • Simmer for an additional 10 minutes before serving hot.

Notes

  • For extra flavor, you can add a small amount of pickle juice or extra dill.
  • If you prefer a thicker soup, mash some of the potatoes once they’re cooked, or use an immersion blender to puree part of the soup for a creamier texture.
  • Garnish with extra chopped pickles or fresh dill if desired.
