This smooth and creamy tomato basil soup is rich in flavor and perfect for cozying up on a chilly day. Simple ingredients come together for a comforting, homemade soup!


Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cans (14 oz each) diced tomatoes
  • 1 cup vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  • In a large pot, heat the olive oil over medium heat.
  • Add the chopped onion and garlic and sauté until fragrant, about 3-4 minutes.
  • Stir in the diced tomatoes and vegetable broth, and bring the mixture to a simmer.
  • Use an immersion blender to blend the soup until smooth.
  • Stir in the heavy cream and chopped basil. Let it simmer for another 5 minutes.
  • Season with salt and pepper to taste.
  • Serve hot and enjoy!

Notes

  • You can adjust the cream to make the soup as rich as you’d like.
  • If you don’t have an immersion blender, you can blend the soup in a regular blender in batches.
