- 2 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cans (14 oz each) diced tomatoes
- 1 cup vegetable broth
- 1/2 cup heavy cream
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and garlic and sauté until fragrant, about 3-4 minutes.
- Stir in the diced tomatoes and vegetable broth, and bring the mixture to a simmer.
- Use an immersion blender to blend the soup until smooth.
- Stir in the heavy cream and chopped basil. Let it simmer for another 5 minutes.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
Notes
- You can adjust the cream to make the soup as rich as you’d like.
- If you don’t have an immersion blender, you can blend the soup in a regular blender in batches.
