  • 2 jalapeños, seeded and chopped
  • 1 onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  • In a large pot, combine potatoes, jalapeños, onion, and chicken broth. Bring to a boil, then reduce heat to simmer and cook until potatoes are tender.
  • Use an immersion blender to blend the soup until smooth.
