- 4 large onions, thinly sliced
- 4 tbsp butter
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 cup red wine
- 1 tsp thyme
- Salt and pepper to taste
- Baguette slices
- Gruyere cheese, grated (for topping)
Instructions
- Slice the onions thinly.
- In a large pot, melt the butter over medium heat.
- Add the onions and cook, stirring occasionally, until caramelized, about 30 minutes.
- Add the minced garlic and cook for another minute.
- Pour in the beef broth, red wine, and thyme. Season with salt and pepper.
- Bring to a simmer and cook for 20 minutes to meld the flavors.
- Preheat the broiler.
- Ladle the soup into oven-safe bowls.
- Place a slice of baguette on top of each bowl and cover with a generous amount of grated Gruyère cheese.
- Place the bowls under the broiler until the cheese is melted and bubbly, about 2-3 minutes.
- Serve hot and enjoy!
Notes
- For a richer flavor, use homemade beef broth.
- If you don’t have Gruyère cheese, Swiss cheese or mozzarella can be used as substitutes.
- Make sure to watch the soup carefully under the broiler to prevent the cheese from burning.
