  • 4 large onions, thinly sliced
  • 4 tbsp butter
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine
  • 1 tsp thyme
  • Salt and pepper to taste
  • Baguette slices
  • Gruyere cheese, grated (for topping)

Instructions

  • Slice the onions thinly.
  • In a large pot, melt the butter over medium heat.
  • Add the onions and cook, stirring occasionally, until caramelized, about 30 minutes.
  • Add the minced garlic and cook for another minute.
  • Pour in the beef broth, red wine, and thyme. Season with salt and pepper.
  • Bring to a simmer and cook for 20 minutes to meld the flavors.
  • Preheat the broiler.
  • Ladle the soup into oven-safe bowls.
  • Place a slice of baguette on top of each bowl and cover with a generous amount of grated Gruyère cheese.
  • Place the bowls under the broiler until the cheese is melted and bubbly, about 2-3 minutes.

Notes

  • For a richer flavor, use homemade beef broth.
  • If you don’t have Gruyère cheese, Swiss cheese or mozzarella can be used as substitutes.
