Description
This Walking Taco Casserole combines the flavors of a taco in a layered, baked casserole form. Ground beef, taco seasoning, and black beans are layered with crushed corn chips and melted cheddar cheese, making for a quick and satisfying meal that’s perfect for feeding a crowd.

- 1 lb ground beef
- 1 small onion, diced
- 1 packet taco seasoning
- 1 can (10 oz) diced tomatoes with green chilies
- 1 can (15 oz) black beans, drained and rinsed
- 1 bag (9 oz) corn chips, crushed
- 2 cups shredded cheddar cheese
- Optional toppings: sour cream, salsa, guacamole, chopped cilantro
Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet, cook the ground beef and onion over medium heat until beef is no longer pink. Drain the excess grease.
- Stir in the taco seasoning, diced tomatoes with green chilies, and black beans. Simmer for 5 minutes.
- In a 9×13 inch baking dish, layer half of the crushed corn chips, followed by half of the meat mixture and half of the shredded cheese. Repeat layers.
- Bake in the preheated oven for 15-20 minutes, until cheese is melted and bubbly.
- Serve with optional toppings like sour cream, salsa, guacamole, and chopped cilantro.
Notes
- For added spice, you can use spicy taco seasoning or add sliced jalapeños to the layers.
- You can substitute ground turkey or chicken for the beef for a lighter version.
- If you prefer a crunchier texture, reserve some corn chips and add them on top of the casserole during the last 5 minutes of baking.
