- 4 eggs
- 100g sugar
- 80g flour
- 20g cocoa powder
- 1 tsp baking powder
- 300ml heavy cream
- 1 can of cherries (drained)
- 50g chocolate shavings
Instructions
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a mixing bowl, beat the eggs and sugar until light and fluffy.
- Sift in the flour, cocoa powder, and baking powder, and fold gently until well combined.
- Pour the batter onto the prepared baking sheet and spread evenly.
- Bake in the preheated oven for 12-15 minutes, or until the cake springs back when lightly touched.
- Remove from the oven and let it cool completely.
- Whip the heavy cream until stiff peaks form.
- Spread the whipped cream over the cooled cake, leaving a border around the edges.
- Drain the cherries and place them evenly over the whipped cream.
- Carefully roll up the cake from one short end to the other, using the parchment paper to help.
- Place the roll on a serving platter and sprinkle with chocolate shavings.
- Chill in the refrigerator for at least 1 hour before serving.
Notes
- Be sure to cool the cake completely before spreading the whipped cream to prevent it from melting.
- For added flavor, you can drizzle chocolate syrup over the top before serving.
