Ingredients

  • 100g sugar
  • 80g flour
  • 20g cocoa powder
  • 1 tsp baking powder
  • 300ml heavy cream
  • 1 can of cherries (drained)
  • 50g chocolate shavings

Instructions

  • Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  • In a mixing bowl, beat the eggs and sugar until light and fluffy.
  • Sift in the flour, cocoa powder, and baking powder, and fold gently until well combined.
  • Pour the batter onto the prepared baking sheet and spread evenly.
  • Bake in the preheated oven for 12-15 minutes, or until the cake springs back when lightly touched.
  • Remove from the oven and let it cool completely.
  • Whip the heavy cream until stiff peaks form.
  • Spread the whipped cream over the cooled cake, leaving a border around the edges.
  • Drain the cherries and place them evenly over the whipped cream.
  • Carefully roll up the cake from one short end to the other, using the parchment paper to help.
  • Place the roll on a serving platter and sprinkle with chocolate shavings.
  • Chill in the refrigerator for at least 1 hour before serving.

Notes

  • Be sure to cool the cake completely before spreading the whipped cream to prevent it from melting.
